Rainbow Kitchen began its journey as Rebel Tonics in 2016.
After years of working in the herbal tonic world, Talitha created Rebel Tonics with a deep understanding of how powerful micronutrients and superfoods can be—especially after the birth of her first child. What started as a farmers market booth serving customized tonic herb drinks quickly grew into something bigger. We saw the lack of truly vibrant, whole-plant-based food and felt called to create the place we ourselves wanted to eat at.
Inspired by Maui’s endless rainbows and the island’s abundant, colorful fruits, Rainbow Kitchen was born. We bought a tiny yellow food truck, struck a deal with a local landlord, and parked ourselves along the North Shore of Maui off Hana Highway. With babies on our hips, we built a small deck, added a bamboo shade structure, gathered tables and chairs from yard sales, and slowly—beautifully—people found us.
From the beginning, we’ve been devoted to using the fruits of the land. We pick jackfruit from customers’ trees, trade meals for fresh produce, and cook with deep gratitude for the island and the people who nourish us.
Talitha’s background in macrobiotic cooking and her artist’s eye shape every dish we make. Each plate is balanced with yin and yang, visually stunning, and full of bold, harmonious flavor.
As our community grew, Talitha’s brother, Simeon, joined the Rainbow Kitchen family, bringing his own macrobiotic mastery. Together, we catered weddings, funerals, surf competitions, festivals, fundraisers, and farmers markets—growing a loyal, enthusiastic following on Maui.
After the 2023 Maui fires, and after organizing multiple benefits to support victims, Talitha moved back to the mainland while Chef Simeon stepped in to run Rainbow Kitchen Maui full-time. He continues cooking with immense love for the land and the people, maintaining the same high-quality standards — and a consistent 5-star rating on Google.
Rainbow Kitchen remains a true family business rooted in intention, creativity, healing foods, and connection. And the story continues to unfold.
